Have you tried running open source apps on MacOS lately? There seems to be broad loopholes, but if you don't match one you need to jump through flaming hoops to run it. Also, apps are sandboxed by default, so accessing data often requires similar prompts. Fine as long as it's protecting your data, but the difference between this mock and reality comes down to who sets the boundaries
