If I had to live out the rest of my life as a cheese, I’d be a well-aged wheel of Alpine cheese—maybe a Comté or Gruyère. Self-contained, sturdy, introvert and perfectly at home in the mountains. No need for a crowded cheese board—I’d just sit there, mellowing with time, enjoying the crisp Alpine air, and savoring the peace…
