Threw down some kosher salt on a clean hot cast iron skillet, seared one side and salted on top. Turned over a few minutes later, and cracked a lid over for a few minutes.

Removed to rest and added pepper to one side.

Threw three washed and roughly julienned leeks in same hot pan with 4oz water, stirred and covered until soft.

Very simple.
