I have a guide, but it’s not NIP57 compliant. Just for receiving sovereign zaps.
Sounds like next release of Btcpayserver will include NIP57 support, which will likely be the easiest way to set up a true self sovereign zap experience

It appears that sovrnbitcoiner is down, and x21 (site maintainer) hasn't been seen in a few weeks so not sure it will ever be recoverable xD
