Use F-Droid to get Google out of the picture.

You might want to switch to GrapheneOS if you are concerned about Google. Works well for me (all but tap to pay).

For me the solution was to buy a Pixel phone. Flash GraphenOS to it (can be done via a desktop browser)
There are some things to get used to (like no app store) in the beginning.
Use as many apps you can via the browser. Install F-Droid from their website, you can find a lot of useful apps there (like OSM maps with). Try to get APKs for other apps directly from the creators website.
