After 3 months of tinkering I am finally pulling near perfect espresso shots. This morning I hit exactly 36 grams in 28 seconds with solid pressure.

Nice.
You made something custom that makes it so hard? I usually need max 4 shots with new beans to dial it in, only tuning the grind size.
Nah, I'm just using the sage barista express. It just took me a while to finally get the pressure and timing right. The biggest key was getting a scale with an auto-timer that starts counting the moment espresso hits the cup. This is what really allowed me to dial in.
Ah yes, i bought the sage oracle a while ago so my gf gets to enjoy fairly easy cappuccinos but i immediately bought a df64 gen2 grinder with it myself so i can single dose 18g of beans and get consistent shots all the time.
The grinder on the oracle is not horrible but the output with auto-tamping varies by 4g from what i have measured and that makes a big difference on flow.
