Its celiac disease that focuses on serious inflamation of the brain. Even small doses or contaminated food will give me a migraine for 2 weeks. Cant work, cant function, just bed and pain.
Damn, yeah I have migraine aswell, I get it from blue light/screens. Not comparable to yours but I know the feeling a little. (Blue light blocking glasses help me perfectly)
out of necessity and economics i switched to a milk diet. it fixed a problem i was having with a damaged tooth, and it's steadily repairing a nerve damage problem i have which was causing double vision (it's still a bit touch and go but generally i am seeing better and better every day).
the thing is, the milk has to be from pasture fed cows. corn fed cows, the milk i can taste the corn oils in it and i also get inflamation problems, generally all over my body but also in my ears, which causes tinnitis.
i think if you look closely at all the things you are eating, every last bit of it that has somewhere in its processing corn, genetically modified bacteria, seed oils of any kind, starches, sugars... hell, i'm just throwing all sugars out.
the sugars are a thing too. artificial sweeteners do actually feed bacteria and the product of it is neurotoxins. i am dead certain now that sucralose and acesulfame k were involved in my tooth pain problem and the nerve damage that has caused me to have chronic double vision, that i at first was worrying was wernicke/korsakoff syndrome (from drinking alcohol).
i also don't drink alcohol now, once in a fortnight maybe i have a couple of beers or a couple glasses of wine but sugars are out, they turn to acid and they feed toxic bacteria that produce neurotoxins and upset my digestion and fuck me up.
i kinda forget just how bad it is sometimes, but that's just showing you how well the pasture fed milk diet is helping me recover.
i'm even starting to get a little jacked from doing the odd bit of exercise, and rucking regularly, carrying 12-18kg of weight in a pack on 5+km walks.
i dunno if any of that info can help you, since you seem sure you have celiac but i think that there is a whole array of syndromes now with many common industrial food additives and ingredients that may actually be the cause of your problem and not what you think.
not to say don't avoid bread. i haven't eaten bread at all maybe once in the last year, just a tiny bit. but there's a whole swathe of things you need to avoid.
also, it's practically impossible to eat good food at all, in many places now. every single thing on the shelves in the UK makes me sick. it's only because i can get proper grass fed azores cow milk that my health is starting to come right.
We are very careful about our diets. Raw milk only, organic grass fed beef, we have a farm we go to that has low adrenaline chicken, i also have severe allegies to soy and msg which eliminates the majority of grocery store products in the USA so we keep it simple in my house 😅
