There are so many reasons why you might produce something yourself. It's not purely a financial decision. Where & how you allocate your time is entirely personal. Evaluating the success of that time investment is also subjective, but you generally don't know until after you've made it.

COVID showed just how fragile our supply chains are to disruption. They are still very fragile.

The quality of nearly everything you buy has also decreased. I rarely eat out because of seed oils & I can usually prepare a better quality meal at home.

I personally enjoy producing my own stuff. I don't need to work for fiat any more & I see producing stuff as an investment in my resilience. It also shows me what's worth producing & what's better to be purchased. I'd financially be better off working the fiat mines & stacking sats but I'd rather work for myself.
