It's basically butter that has been boiled with water under it.

Very popular in Indian cooking. It loses the smoothness of butter but it loses the casein and lactose as well which has benefits, because not everyone is adapted to milk after about age 8

Also, butter, cream, egg yolk, beef, sheep and goat tallow, there is also chicken and goose and duck fat. They are all very good for you and hard to find these days.
