Yes the UI/UX of Bisq 1 is not great. It is a power user platform. I have given presentations on it and been surprised with how some less technical people have managed to use the platofrm.
Bisq 2 has been a big improvement on UI/UX and allows people a smoother onboarding process. It is still desktop only for now, which is not ideal.

Use robosats. Works great on the couch (app and tor browser).
I have to admit I haven't used it for a while. Sometimes there were less offers.
That's sometimes the case but usually you'll have a matching offer
