Soak 24hrs in brine, then drain and pack in salt in sealed buckets.
(I've watched it being done but not done it myself yet. Might see if I can ask my neighbors if I can plunder their tree!)
I cover mine in salt in a container and shake daily for 3-4 weeks until the bitterness is gone enough for your taste. Then I cook a roast in the wood oven and once the oven is cooled down enough after I place the olives on a tray and slowly cook/smoke the olives overnight. They shrivel up a bit but get a tonne of wood oven smoky flavour
