Have you considered lacto fermenting them?
We dont have a freeze drier, but I'm sure fermentation would work for them.
Sunchokes are best left in the ground for storage. They don't do well for long after harvest. I always leave them in the soil until I'm ready to eat them or propagate in the Spring.
Never heard of someone freeze-drying them though, except to make inulin powder, but would be curious to hear your results.
