I watched the video. Bitcoin is non-fungible - but does that include lightning? I thought that lightning is off-chain on another network.

No. It's a bit more complicated than this, but from a technical angle, lightning is Bitcoin. Lightning is not as private as some people make it out to be.
And zaps by nature are pretty much a public record of who sent who money. A Zap is a lightning payment that attaches Noster public key data to a note. And it's all public.
