Miners help to process transactions on the network. That’s about as simple as it you could make it.

When a miner finds a block he gets rewarded with Bitcoin. Blocks contain transactions made by Bitcoin user and while those Blocks are getting mined the transaction will be verified and integrated into the blockchain which will save all transactions ever made so all user can see this transaction.
It’s akin to brute-forcing. Mining is rapid-fire guessing using as much energy as possible.

I tell them it's similar to printing your own money but without the hyper inflation of the central bankers.
Side note, it feels good to print your own money.
