I have Grown both purple califlower and purple beans, if you steam or boil them they turn white.
Purple carrots still taste amazing, they get eaten before they can be cooked

Ah thats where the confusion comes from never steamed or boiled them.
Roasting is my go to for veggies .
My children find the roast too strong on flavours, in time it will come but for now, they enjoy blandness
Fun fact kids have way more tastebuds than us adults as a resultkids often dont like veggies because to them its super bitter , perhaps this is the case here
