It was new to me too. Bonsai people will use a wire for two things. Keep the bonsai in place when first potting (wired from the bottom of the pot drain holes and around the trunk) and second when new little branches come out that they want to "shape". The wood will harden in the wire shape and then you remove the wiring

Not always, for example this one in my picture already had that shape. But as new branches come in then people like to play or even just to keep the original look.
