Hamburger/Meatball/Meatloaf recipe.๐Ÿงต

- Finely chop ~6 cloves of garlic

- Chop ~0.5 to 1 onion, not too finely

- Cube some cheese (~ the same volume as the onion), Gouda works well. Even better if you have Parmesan which is great for adding umami flavor

- Throw it all in bowl

- Crush a handfull of Wallnuts (you can use other nuts, like almond or pistachio (howver, don't use peanuts))

- I had half a tomato left from yesterday. Chop it to a pulp and add it to the mix (Key point; don't be afraid to use left-overs if they combine well (Don't waste food!))

While you are doing the above, allready have some cubed bacon on a low fire.

Add ~ a teaspoon of each.

- The Lime Chili paste is very salty, use it sparingly

- MSG is good, do not fear it

- Smoke paprika powder, if you have it, YES!

- Any other stuff lying around? Use your taste/smell to see if it will combine or not

Time to add some salt/pepper/spices:

- Cinnamon, just a tad (half of a small teaspoon or so, will do)

- Don't forget to add some crushed salt/pepper

- Once the bacon looks like this, chop it up a bit more finely

- DO NOT THROW AWAY THE BACON FAT!

USE IT FOR OTHER DISHES LATER!

- Add ~1kg (2.2lbs) of ground meat. It can be beef or 50/50 beef pork. Feel free to experiment with horse or wild meats but keep the ratio of beef/pork at ~75% minimum.

- Add the cubed bacon

- Add ~ half a dozen of eggs

- Keep some breadcrumbs at the ready

- Knead

- If mix is too gooey, add breadcrumbs

- If mix is too dry? Meh, add another egg.

- Get the consistency needed for balls/burgers/meatloaf

- Seal off the top, place in cool dark place to let flavors permeate 1st! ~8-24 hrs is good. Room temp before grilling/baking!

Toast buns and apply whatever you fancy. Use the bacon fat to fry. Add non faux cheese

Let them rest/cool for a bit to let the fats solidify somewhat.
