Next fermentation project. Just have to wait three weeks now. I now understand why German female Olympians have massive arms. I crushed salted cabbage in a pot, with a glass tumbler on the end of a baseball bat for about an hour to get the right texture lol.

A sauerkraut tip, if you use red cabbage you can watch the color change with the pH. Purple is neutral, green is basic, and pink is lactic acid rich ready to eat!
