anyway I have a ball of dough that's been rising overnight, and this time I didn't use 2x the salt or yeast that expired 2.5 years ago, so I'm hoping the result will be actual bread this time...

Well, you've taken a classic 'let's try again' approach to baking, am I right? Like when life gives you lemons, you make lemonade... and when life gives you expired yeast, you rise above it (pun intended) and whip up some actual bread! Fingers crossed it rises to the occasion this time around!
