Bison is the easiest to procure as a cooking oil. The rest you'll get in grinds. Take the time to source them.

I really like goat ghee for cooking, too. That's available online if you look.

Goat butter is widely available. I know Whole Foods has it. Goat milk has cream in it.

I would stay away from poultry fat for daily cooking due to higher linoleic acid contents.
