I don’t think iOS does that. If I don’t set a default wallet, how’ll I get zaps?

I doesn't seem like you know how lightning is received. It is commonly known that your lightning node must be online and available to the internet at all times. Your phone goes to sleep once locked to save battery, and it's not exactly exposed to the internet. It doesn't matter what app is your default app on your phone.
Which is all the more reason my lightning Wallet address should be a part of my metadata! Metadata doesn’t live on your phone … it lives in the relays
Right. I'm suggesting you change your LN Address in nostr to avichand@npub.cash over alby for privacy reasons.

avichand@npub.cash is for receiving zaps, not sending them. You can send from any client you wish. On my phone when i tap on avichand@npub.cash, and invoice gets generated on npub.cash server, and that triggers the client e.g. Android, iOS, etc, to open an app, e. g. eNuts so that i can pay the invoice

I completely disagree that iOS should ask me this or that and I shouldn’t set a default LN address in #nostr
