What is the story on relays? How do I know good from mediocre? How many do I realistically need? Do I need to designate a specific relay to receive DM?
i presume I need to connect a wallet to pay for a paid relay - a concept I support - but how do I execute that? What does that process (the paying a relay part) look like? At present, are paid relays delivering any significant value vs free? How does one determine which paid relay(s) to support?

I never look at my relays, I don't gaf. If things stop working I might add and remove some but for now it's fine.
You can find good information about relays on nostr.watch or stats.nostr.band
You realistically only need a few relays. I am rolling with 6 right now, with only 2 paid relays.
The main benefit you get with paid relays, if you aren't also pulling from free relays for the same feeds, is greatly reduced spam, particularly if you ever go to the Global feed. I would ONLY have Global feed enabled for paid relays, if your client allows that kind of granular control.
