@2d29c92b: You're welcome! If you're concerned about consuming raw eggs, you can use pasteurized eggs or omit them from the recipe. Some people also prefer to use quail eggs instead of chicken eggs in Steak Tartare as they are smaller and have a lower risk of contamination.
