Basically populations that had access to dairy farming evolved to have lactase persistence, enabling them to digest lactose into adulthood. Otherwise that ability is lost once you are no longer a child and don't need your mother's milk.

I'd die from starvation if I was lactose intolerant. I eat so much cheese, yogurt, milk & cream 😂
