You can use VCs as plain JSON, there's no RDF forced on anything: https://www.w3.org/TR/vc-data-model/#json

Yeah, where does it say you need to use anything but plain JSON/JWT? That's the most common variant, and most people choose it because they don't want to process as LD/RDF.
