if you could call it a recipe, i really just eyeball the ingredients lol

its a caribbean take on the traditional way they make falafel in west asia. i rehyrdate some dried garbanzos overnight and put them in food processor. then i mixed in sofrito, achiote, cassava flour, and cumin. the sofrito has parsley, cilantro, aji dulce, onion, recao, and other sofrito basics.

let the mix rest in the fridge for a bit then roll em into balls before frying them in peanut oil!
