So good, found a wagyu one the other day. It melts on the knife without applying any heat to it. Absolutely boss.

What's your method?

I do a fair amount of brisket.

The trimmed fat from the brisket(s)

Gets reduced in a large pot on a stovetop for about 12 hours. Then filter it and can it.

Maybe, until you start to smell like tallow/beef. Nobody seems to mention this , but these guys smell a very specific way.....not a good way imo
