The Pacific Northwest has crayfish. They like to live around the headwaters of lowland rivers.
I learned this, because I found one in my water pump. 🤷

Crayfish boils are good.
In the south they are crawfish (rhymes with clawfish)…if you come to jennings, Louisiana (between December and June) go to Darrel’s or ces bon’s and try boiled crawfish…it’ll be a near religious experience
