Food forest harvest: Rhubarb (and leaves)

Not a bad first whack at the rhubarb this season considering I dug it all up and split it out to the swales in the silvopasture were the sheep graze.

I'm sure I'll get another harvest or two before the summer is through. In the meantime, this harvest is vacuum sealed and waiting for the strawberries to come on for classic strawberry rhubarb pie. The leaves will hit the Bitcoin mining dehydrator once the sassafras root is done. We make high power cleaner with the leaves by making an infusion with vinegar.

We have so much rhubarb too!!

I’m very intrigued by how you’re using the leaves. Would you mind sharing how you make a cleaner (and it’s benefits)? Is the key the combination with sassafras?

The cleaner is simple as can be. Combine as much leaves as you can cram into an container (I use mason jars) add vinegar until full and leave out in the sun for a few days. You can keep shoving more leaves in if you have them after each batch or just add vinegar again to continue extraction (good for 2 or 3 times). Basically it is getting the oxalic acid from the leaves into the vinegar. Great for removing rust stains and soap scum just be careful using it on wood. It can eat away at the finish/polish.

Food Forest Harvest: Strawberries

Found 15 minutes to pick some strawberries before lunch. It's hard to keep up with them with a short window of good ripeness. I hate to not pick every single good strawberry but I simply can't get pick them all in time. I'll do my best to pick for 15 minutes here and there for the next couple weeks and see how many we can get!
