Yes, she studied a full training in all aspects of coffee brewing including the foaming milk, decorative cream/milk techniques, roasting, hand drip, espresso etc. Hand drip coffee brewing is very popular in Japan/Taiwan/HK and she chose to specialise in that aspect of brewing. For the honey-processed type beans it seems the hand drip technique is the best way to draw out that incredible aroma and taste. It involves meticulous weighing of the bean, choosing an appropriate grind level, careful water temperature for the boil and lastly a very specific technique on how the water is hand poured over the grind. If you haven't tasted one of the good musician series beans brewed in such a way, I truly believe it will quite certainly shock you as the flavours are unlike anything else in the coffee world.
