I get that you can then use Alby to login to multiple websites so it’s safer than proving your key to multiple websites, but you still need to trust alby, no?

The difference is that Alby is an open source extension that you can check yourself is doing what it says it is - you can even install it manually if you want - and that it is not loading random code from the internet in the same sandbox process as where you're putting your nsec.
There is certainly more trust required in Alby than, for example, a Bitcoin hardware wallet, but it's much better than websites.
Yes, of course you are right.
It doesn't work without trust. The Alby account is protected by an unlock password and an user password and can then manage the nsec. So, as you rightly said, it is better to set the nsec once in an account than to always use it pure everywhere. Of course it's not 100% sure.
