I'm pretty sure cashu will serve the fiat maxi use case, as people are working on that. And even nip60 allows to denominate the wallet in other units than sats.

Yes, and I think this is a good thing, for Bitcoin, because it is then treated like a currency. Exposing Bitcoiners to fiat also works vice-versa, after all.

If Bitcoin is best, it can demand a premium because many producers will want to convert to Bitcoin after sale.

The main problem I see there, is that people will get lazy and leave everything in eCash.
