So why should one choose the brass option over stainless steel?

Just for looks, not for utility. It has a lower melting point than stainless.
Spot on—brass looks great but not house-fire safe like stainless steel.
Fire is the likeliest risk so stainless is better with the higher melting point, whereas for corrosion (underwater, sea, etc.,) brass does a bit better.
Sold out of brass, otherwise I would say get one of each ;n)
