The law says I can't decide not to sell my house to someone bc of gender or race or other demographics. I think that's fair. Why should I be allowed to offer preferential treatment in funding education? That seems to me to be a lot more important.

Not broadly. In specific circumstances they do have that role.
But also the DEI movement isn't that type of inclusion
