The Brussels sprout is a member of the Gemmifera Group of cabbages (Brassica oleracea).

They contain high levels of vitamin C and vitamin K, with moderate amounts of B vitamins, such as folate and vitamin B6; essential minerals and dietary fiber exist in moderate to low amounts.

They also contain sulforaphane, a phytochemical superfood, which is produced when the enzyme myrosinase transforms glucoraphanin, a glucosinolate, into sulforaphane upon damage to the plant (such as from chewing), which allows the two compounds to mix and react. Although boiling reduces the level of sulforaphane, neither steaming, microwave cooking, nor stir frying cause a significant loss.
