All meat or bison specifically? Never had a bison steak, only a burger. It definitely tastes so much better a level rarer than you normally like due to the low fat content.

Fat is good for us tho. Butter or tallow on top to balance

I used to eat sticks of butter as a kid. So I’m not gonna argue with your line of thinking.

I have only returned one rare steak in my life for being undercooked. It came to the table looking like it was sprayed with a light gray Krylon paint... It was lost somewhere in steak cooking limbo.
