Does this mean our nodes could soon be routing USDT transactions? From my understanding after looking at the Taproot Assets docs, nodes wanting to send or receive USDT would need a Taproot Assets enabled channel but the transaction is passed as a standard Bitcoin lightning payment through intermediate nodes.

Yes and no. Your channels will still just be routing sats. It's the nodes on the sending and receiving side that will be converting from Tether into sats, and then from sats back into Tether on the other end.
