Markdown is apparently not allowed in NIP-01

Should clients change it to a 30023 if it’s detected?

I don’t think clients should be modifying events, but a reasonable option would be to ignore them.

Just let clients send markdown, the whole point of markdown is that it's human readable

I've been using it with Amethyst. Just loading things in iOS especially long links looks funky 😂

Yes, I just mean if a user writes markdown it's fine. Clients shouldn't support rich text editing and compile to markdown.
