Are you using the cheek muscles also? We enjoy the liver also. Cut it up into strips and fry it up. Can freeze the strips on a pan laid out not touching and when froze throw in bag. Take out enough for a meal and let thaw on a plate in fridge. Take out in morning for lunch. My youngest daughter loves it. The others are indifferent.

We don’t raise our own beef. We buy from a friend. We bought 1/2 beef and I asked for the offal. I don’t think cheeks are part of that. I will be using the heart and liver.
