Cashews begin their journey as fruits from a large evergreen tree that thrives in tropical climates. The tree first produces vibrant red flowers, which then develop into juicy, apple-like structures. Surprisingly, these aren’t the real fruits.

The actual cashew “fruit” is the kidney-shaped formation at the bottom of these so-called apples. Before cashews can be enjoyed as a tasty snack, they must be carefully roasted to remove toxins from their outer shell—a shell that’s as irritating as poison ivy.
