I would absolutely watch it. I tried setting up BTCPay server but eventually gave up and went with nodeless. Although the main part of my issue was that umbrel will only run over TOR

I always appreciate education though

On my end I'll use https://lunanode.com for the setup, can vouch for them as privacy friendly place to setup your BTCPay Server.
