For 51% attack they only need to convince 3 of the 5 biggest mining pools to join up.

Nodes don't compute, miners do.

The longest blockchain is the valid one, and nodes don't add blocks to the chain.

How would those of us running nodes stop this?

Getting consesus on that would be risky, wouldn't be possible without a huge threat. Miner consolidation, quantam etc

for sure, nuclear options would require the most dire of all circumstances

What algo do you choose? How do you ensure it will not happen again if you donc control the chips production?
