I just dry them off really good and cover them in oil, salt, pepper and onto the baking sheet. Lol

Parboil your chicken wings in salty water (a brine almost?) for about 8 minutes then blast at 450 in the oven until crispy. So good.
Another food science tip is to add baking soda when doing the par boil!
