As a kid who grew up with my Mom working part time at a local slaughterhouse with a retail butcher shop at the front, can verify. It also honed my sales techniques as I tried bartering off my head cheese or blood and tongue sausage sandwiches for PB and J’s that the “normal moms” sent my classmates to school with lol.

How do you get the brains if that's usually how you stun before sticking the pig?

We dont get the brains. This is made from the cheeks and whatever else I could cut off with the knife :)
