I don't undetstand how it works. But, it looks like it is adressing how having multiple trading platforms reduces liquidity and hinders trades.

Each platform publishes its P2P offers on NOSTR, creating a single, comprehensive order book. Then, to trade, you go to each app.

Do you follow each platform on Nostr to see the offers, or is that aggregated in some way?
No, the site https://p2p.band/ searches NOSTR for all the offers from different platforms, then you have to go to the specific platform to make the trade.
For example, I want to buy BTC with Argentine pesos, so I click where I've marked with the red arrow and it opens the lnp2pbot Telegram channel directly to that offer 🧡
