Yo!!! I made this for the family (4 of us) last night inspired by this post. Holy smokes!!! We all melted into heaven. It was so delicious. I first took 2 chicken breasts (free range of course) and sliced them in half along the length, not the width. Then I pounded them flat. Added about a cup of pickle juice and a few other spices. I marinated them for 12 hours. I made the batter from scratch using egg whites, flour, and smashed up crackers. Then I fried them in organic sunflower oil. Served them up on homemade buns with the usual condiments and sliced avocados. Yum yum yummy 😋
