I used to recommend bisq every time but have started recommending haveno instead, you might want to look into it

does Haveno use the 2-of-3 multisig trading model?

As I remembered. 2-of-3 was an old protocol for Bisq, discontinued as it gave way to risky scams in case the 3rd signer colluded with a dishonest trader.
Interesting. This might be another area like nostr clients where I'm better off just telling people what's out there without recommending anything in particular
