If I'm on relay A and I only post on it. and some users are on relay B, will I be able to see their posts and they see my posts? or relays do not connect to each other?

No.
Joing more relays helps make sure you overlap on at least one. I don't reccomend trying to join them all. Less than 20 will get the job done and often around 10 is good.
I thought all connect to each other like mastodon or something. that sucks
after asking bard, it says #nostr relays contact with each other too
