Yogurt experiment with inconclusive results!

My friend gifted me some raw milk and I turned a lot of it into yogurt using my usual scant amount of parent yogurt, twice my normal amount, and three times the amount.

At first I thought the 3x amount was a bit more sour, but I’m not really sure. They pretty much all taste alike.

The cream top is a fun feature that has happened every time I’ve used raw or creamline milk to make yogurt. Is it technically cream cheese? I’m not sure!

The yogurt is already nice and thick, but I’m straining it because I like it extra thick and I like using whey in stuff. I’m also going to try to make at least some of it into labneh and give it to the friend who gave me the milk as a thank you (he is Lebanese).
