This is a huge reason I stopped recommending things like umbrel. You want to keep it up to date because there are a lot of moving parts to something like Umbrel so security updates are important. Especially if you have more than just BTC stuff installed.

But you don't choose really what to update. If they decide to upgrade core to a verson with features you don't like or want to support your stuck between a bit of a rock and a hard place. Of staying vulnerable or updating.

Start with running Bitcoin Core's GUI on a laptop or something and build from there.
